The intense scent typical of saffron is spicy, aromatic, woody and phenolic. Its flowers begin to grow in mid-October and are picked in groups, usually by women who put them in their aprons and carry them home in baskets. This laborious work, which requires some skill, takes place from dawn to dusk and lasts 20 to 25 days.
